Spicy Sambal Sardines

This aromatic recipe pairs beautifully with warm rice and is very popular in Malaysian and Indonesian cuisines.

Ingredients 

  • 1-2 Munnujii cans of sardines in tomato sauce with chili
  • 1 medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-2  chilies, sliced
  • 1 tsp turmeric powder (optional)
  • Salt and a squeeze of fresh lime juice
  • 1 tbsp cooking oil

Instructions 

  • Heat oil in a pan over medium heat and add onions, garlic, and sliced chilies until soft and fragrant.
  • Add the turmeric powder and cook for 30 seconds.
  • Carefully pour in the canned sardines along with their tomato sauce. Add a splash of water if the sauce is too thick.
  • Simmer on low for 5 minutes, gently stirring to combine without breaking the fish apart.
  • Season with salt and finish with a squeeze of fresh lime juice.
